I've seen probably 1000 concerts so my "greatest list" is probably a long one, but some of the best:
1981 - Rolling Stones, Journey, George Thorogood - Rich Stadium.

1981 - Styx - Memorial Auditorium - Buffalo, NY
Slim Pickens was there and introduced the band
1986 - Ozzy/ Metallica - Austin, TX
Ozzy was in his prime and Metallica was just gaining attention with the Master Puppets album
1988 - Lynyrd Skynyrd/Gary Rossington Band - Buffalo, NY
Lacy Van Zandt introduced the band after a 15 minute video detailing the history of my then favorite band of all time. All the classics! And Freebird done instrumentally, as it should be. Too bad they sold out and started singing the words that Johnny VanZandt once said could only be sung by one man!
1994 - Pink Floyd - Yankee Stadium
Epic. legendary and that was just the venue! The band, incredible. Everything you'd expect from these geniuses and more!
1996 - Edenfest - Mossport Park, Toronto - 3 days of amazingness and great bands like Bush, The Cure, 7 Mary Three, Sloan, Tracy Bonham, Ever clear, Spacehog, Porno For Pyros, Live, Tragically Hip, Mighty Mighty Bosstones, Goo Goo Dolls, and a ton of others.
2003 - Grateful Dead/Bob Dylan - Buffalo
I heard Dylan was either great or horrible. This show he was great! One of hundreds of shows I worked at 6 Flags and Dylan used my cell phone. Priceless!
2011 - Elton John - Peoria
Chef Kev invited me at the last minute, having never seen the legend and it awesome. His voice and his band were dead on and he played everything!

Also, seen 5 Warped Tours, 2 Ozzfests and too many more to remember
