But the hydrogenated stuff in the bucket, already rendered, works fine for pie crust.
 
I grew up rendering fat for soap and lard with my grandma. I have not done it years, because the bucket from the store is quicker and its not hat expensive. My sister had gotten back into making her own soap and lotions, so she is rendering fat again.
 
Any butcher will usually sell you the back fat or leaf fat cheap. You may have to ask them in advance to set aside a sufficient quantity for you.

If you are looking for really fresh, rendering isn't hard. Basically, you just cook the fat down slowly at a low heat and strain off the liquid as it forms.
 
I am sure there are plenty of web sites and you tube videos to provide more details.
 
Actually I think you just came up with a good idea for something to sell at a farmers market. Fresh, local lard.... you could put in cute jars with a pie crust recipe attached with a ribbon.
 
(I wonder what the health department requirements would be to sell that?)
