What are the best herbs to plant in our area? We had a few last year and towards the end of the year learned how to dry them and use in cooking so this year we are wanting to do a better job at that. I think we planted parsley (so many varieties to choose from tho), basil, chives and a couple others last year but I can't remember what. I would like to plant something to put in hot tea this year also.

I have garlic chives, oregano (Greek and Italian), Lemon thyme, English thyme, Lavendar, tarragon, sage (had a striped sage last year), Rosemary, several kinds of mint..all those are plants. I plant the rest from seed.. Flat leaf parsley (Italian), curly parsley, lots of dill for pickling mostly, cilantro, sweet basil (some plants, some seed).

@butterfly:
Most herbs do very well in our area. Some perennials that I grow are thyme, sage, chives, tarragon, peppermint and spearmint. Lemon balm also grows very well (be careful...it will spread) and makes a very nice tea. Parsley (all types) is a biennial, but it's best to grow it as an annual. I grow the Italian flat-leaf.
The annual herbs that I grow include cilantro (the dried seed of this plant is called coriander), Sweet Genovese basil (good variety for pesto) and a beautiful Thai basil that has purple stems and leaf veins, called Siam Queen.
The basils like rich soil, but most other herbs will produce better in poor soil. In fact, the worse the soil is, the better they will do. Just be sure they are getting enough water.

How did I forget to mention dill? Emoticon
I love it...always reminds me of my grandfather's garden!
Dill is grown as an annual, but will self-seed each year.

Are most of the herbs people plant annual or are some perennial? The ones we had last year we planted in pots but if some will come back next year we'll for sure find a place for them.
